Breakfast enchiladas are always a good call, and these cheesy verde enchiladas are here to prove that. It's all in the details: breakfast sausage, hash browns, folded eggs, and cheddar cheese are wrapped up in tortillas, bathed in green enchilada sauce, and baked to bubbly perfection for morning meal that's packed with flavor.

Ingredients

  • 1 tablespoon olive oil
  • 6 ounces of your favorite breakfast sausage, roughly chopped
  • 6 Pete and Gerry’s Organic Eggs, beaten
  • Salt and freshly ground black pepper
  • 3 cups hash browns, cooked
  • 8 ounces extra sharp white cheddar, grated
  • Six 10-inch flour tortillas
  • 28-ounces green enchilada sauce (1 can)

Directions

Step 1

Preheat the oven to 350F.

Step 2

In a pan, heat the olive oil and add the sausage, cook until hot.

Step 3

Add the beaten eggs and gently fold through with the sausages until the egg starts to become firm. Season with salt and black pepper.

Step 4

Lay one tortilla on your cutting board and spoon about 1/2 cup of the egg mixture onto the center of the tortilla.

Step 5

Add about 1/2 cup of the hash browns and some grated cheddar.

Step 6

Start at the end of the tortilla closest to you and begin to tightly roll into a long tube.

Step 7

Transfer the enchilada to a lightly buttered or greased 13×9 inch baking pan.

Step 8

Repeat the process until all of the fillings have been used, making sure to save some cheese to sprinkle over the top of the enchiladas.

Step 9

Once the pan is full, pour the sauce over the tortillas and sprinkle with the remaining cheese.

Step 10

Bake in the oven for 25-30 minutes, until the sauce is bubbling around the edges of the enchiladas.

Step 11

Garnish with some green onion (optional)

Will this work with corn tortillas? Have you ever tried it that way? I accidentally bought corn instead of flour.

Hi Stephanie! Corn tortillas would be a fine substitution for the flour tortillas, they just may not soak in quite as much of that yummy green enchilada sauce. Eager to hear how you like this recipe!

It turned out great, I accidentally got red enchilada sauce instead of green (because I overlooked it). It was still good. Will make again, it was a unique flavor combo and who doesn't love breakfast for dinner!

Enchiladas are not made with flour tortillas, that is a smothered breakfast burrito. To call it an enchilada it must have corn tortillas. Everyone knows that.

Hi Morris, there are 6 grams of protein in one large egg, but a serving of these breakfast enchiladas will be a bit higher in protein due to the addition of sausage and white cheddar cheese. We hope this helps!
