Directions Step 1 Bring a small pot of water to a simmer. Crack egg into a small dish or ramekin. Using a spoon, stir the water in pot vigorously to create a vortex, then gently slide egg into the center of it. Cook until the white is just barely set but yolk is still quite soft and runny. Step 2 Using a slotted spoon, carefully remove poached egg from water and set on a plate while you make the toast. Step 3 In a toaster or heavy-bottomed skillet set over medium heat, toast bread until golden brown. Step 4 Cut avocado in half and remove pit. Scoop avocado into a small bowl, add lemon juice, and mash. Spread a generous layer of mashed avocado over toast, then drizzle coconut oil over the top. Sprinkle chili flakes and flaky sea salt over avocado. Step 5 To finish, gently slide poached egg onto the toast and garnish with the microgreens or sprouts.
