Zesty egg salad with pockets of bacon on a soft, buttery brioche roll? We'll take two! These quick and simple egg salad rolls only require a few ingredients since egg is the star of the show. Because egg salad doesn't have to be fussy to be delicious.

Ingredients

  • 8 Pete and Gerry’s Organic Eggs
  • 4 slices bacon, cooked and chopped finely
  • 2 teaspoons fresh rosemary, chopped
  • 1 tablespoon pickle relish
  • 1/4 cup mayonnaise
  • 1 green onion, sliced thinly
  • 1 tablespoon stoneground mustard
  • 8 mini brioche rolls

Directions

Step 1

Bring a large pot of water to boil, then carefully place each egg into the water.

Step 2

Boil for 8 minutes, then run under cold water to cool.

Step 3

Once the eggs are cool, peel off the shell and transfer to a bowl.

Step 4

Using a potato masher or a fork, crush the eggs until you get a chunky consistency.

Step 5

Add the chopped bacon, rosemary, relish, mayonnaise, green onions, and mustard.

Step 6

Stir well until combined.

Step 7

Divide the egg salad between the brioche rolls and enjoy!

Our hard boiled eggs are available in many, but not all locations nationwide, so that's why we didn't feature them in this recipe. Please let us know how you enjoy the salad!

Make sure to use organic bread or organic wheat free gluten free bread. Don’t ruin a good organic egg salad recipe with conventional poison wheat bread that’s been sprayed with roundup poison.

Hi Lyn! That's a great point. Sometimes we find it helpful to let the eggs rise to room temperature before placing in boiling water. There are also a few different methods for hard boiling that call for the eggs to be added to the pot and covered with cold water, then brought to a boil - this ensures that the eggs won't crack. We hope you'll give the recipe a try!
