Once you dig into these perfectly grilled peaches with zabaglione, a rich and luxurious Italian custard, you’ll be daydreaming about this sweet treat every time you hear the word “dessert.” If you're looking to wow friends and family and end your cookout with a bang, this is the recipe for you! By: Foodness Gracious Ingredients 4 large yellow peaches 2 tablespoons olive oil 2 Pete and Gerry’s Organic Eggs, yolks only 2 tablespoons sugar 1 tablespoon vanilla extract Nutritional Information Serv. Directions Step 1 Preheat your gas or charcoal grill to high heat. Step 2 Slice the peaches in half and remove the center stone. Brush the flesh of each peach with olive oil, then place peaches flesh side down onto the hot grill. Step 3 After about 2-3 minutes, check the underside of the peaches – you should see some nice grill marks. Transfer the peaches to a plate to rest while you make the zabaglione. Step 4 Bring a pot of water to a full simmer, then add the egg yolks and sugar to a bowl large enough to sit on top of the pot without touching the water. Step 5 Using a whisk or a hand blender, whisk the yolks until light and frothy. Add the vanilla and whisk to combine. Step 6 Serve immediately or chill. To serve, place a peach on a plate and add a dollop of the zabaglione over the top of the peach. Garnish with brown sugar and rosemary if desired. What do we do with the eggs yolks after they are whisked? Does the bowl go over the simmering water? If so, when and for how long? In step 4, the bowl of egg yolks and sugar should be placed over the pot of simmering water. Then, in step 5, the mixture should be whisked until frothy (while still over the simmering water) - this can take anywhere from 2-7 minutes, depending on the tool (hand whisk or immersion blender) that you use. Once the mixture is frothy and the vanilla has been added, you can either serve immediately or chill. We hope this helps!
