Topped with simple, ubiquitous ingredients like soft-boiled eggs, avocado, and heirloom tomatoes, this herby egg bowl for one is an unassuming dish packed with more flavor than you might imagine. Mixed herbs and greens - mesclun, arugula, basil, sage, thyme, and dill are all optimal choices here - bring an element of freshness to the table, while the chimichurri sauce they're tossed in wakes up your tastebuds with a punch of piquancy.

Ingredients

  • 2 Pete and Gerry's Organic Eggs
  • 1/2 cup mixed herbs and greens of your choice, finely chopped
  • Half an avocado, sliced
  • Handful mini heirloom tomatoes
  • 1 ounce sharp cheddar, crumbled or shaved
  • 1 tablespoon chimichurri sauce, homemade or store-bought

Directions

Step 1

Bring a small pot of water to a boil. Carefully lower eggs into the water and boil for 6 minutes.

Step 2

Remove eggs from pot and place in an ice bath. Let cool for 5 minutes before peeling shells.

Step 3

In a bowl, toss herbs and greens with chimichurri. Top with sliced avocado, cheddar, and tomatoes. Slice peeled soft-boiled eggs in half and add to bowl, then serve.
