By: Foodness Gracious Ingredients 1 package pie crust dough or your favorite pie crust recipe 2 Pete and Gerry’s Organic Eggs 2/3 cup whole milk 2/3 cup heavy cream Salt and freshly ground black pepper 1 cup cheddar cheese, grated 3/4 cup ham, diced Nutritional Information Serv. Directions Step 1 Preheat the oven to 375F and spray a mini muffin pan with nonstick spray. Step 2 If using store-bought pie crusts, unwrap. If using homemade, roll out pie crust to 1/8-inch thick. Using a 3- or 4-inch cookie cutter, cut out 24 circles. Step 3 Place each dough circle into each mini muffin space and press down into the pan. Use a light touch and don't press all the way to the bottom of the pan to avoid tearing the dough. Step 4 In a bowl, combine the eggs, milk, cream, salt, and pepper. Whisk together until smooth and set aside. Step 5 Divide the ham amongst the mini quiches and top with a sprinkling of grated cheese. Step 6 Transfer the egg mixture to a jug or cup with a pouring spout and add enough of the mixture to each quiche so that it’s level with the top and not spilling over. Step 7 Place the pan on a baking sheet and transfer to the oven. Bake for about 35 minutes or until the egg mixture is set. Let cool for 5 minutes before serving.
