A simple plate of French toast gets an unassuming (but surprisingly effective) upgrade: fresh chunks of Honeycrisp apple tossed in brown sugar and cinnamon. Perched atop soft slices of warm brioche, they'll bring a welcome crunch to every forkful of your breakfast.

Ingredients

  • 6 slices brioche bread
  • 2 Pete and Gerry's Organic Eggs
  • 1/4 cup whole milk
  • 2 tablespoons brown sugar, divided
  • 2 teaspoons ground cinnamon, divided
  • 2 teaspoons vanilla extract
  • 4 tablespoons unsalted butter
  • 1 Honeycrisp apple, roughly chopped
  • Maple syrup and confectioners' sugar for serving (optional)

Directions

Step 1

In a shallow pie dish, whisk together eggs, milk, 1 tablespoon brown sugar, and vanilla extract until well combined.

Step 2

In a small bowl, combine chopped apple, remaining brown sugar, and cinnamon. Set aside.

Step 3

Melt butter in a large cast-iron skillet over medium-low heat. One at a time, dunk each slice of brioche bread into egg mixture, then place in skillet. Cook each slice until golden brown, about 1-2 minutes per side.

Step 4

Divide French toast among three plates and top each with the apple mixture. Add maple syrup, a sprinkling of powdered sugar, or your favorite toppings before digging in.
