Hop out of that blanket cocoon (it's hard, we know) and get into the maple syrup spirit with a pile of thick-cut eggnog French toast. If you've got dairy-free diners at your house, go the extra mile and whip up some dairy-free eggnog to use in this recipe. By: Foodness Gracious Ingredients 1 stick (4 ounces) unsalted butter, divided in half 2 cups eggnog 2 tablespoons sugar 4 Pete and Gerry’s Organic Eggs 1/4 teaspoon cinnamon Pinch of nutmeg 1 unsliced loaf brioche or Hawaiian sweet bread Maple syrup and whipped cream for serving Nutritional Information Serv Size: 1 slice, Servings: 5 Amount Per Serving: Calories 480, Fat Cal. 220, Total Fat 25g (38% DV), Sat. Directions Step 1 In a medium bowl, whisk together the eggnog, sugar, eggs, cinnamon and nutmeg. Step 2 Cut 4-6 slices of bread about an inch thick. Step 3 Melt half of the butter in a large nonstick pan over a low-medium heat until it begins to foam. Step 4 Dip two slices into the batter, making sure to coat both sides. Lift the slices over the bowl and let the excess drip back in. Place the slices into the pan and cook for about three minutes, then flip slices over when the first side is golden brown. Step 5 Cook second side until golden brown, then place both slices of bread on a baking tray. Cover with foil to keep warm and repeat with the other slices, making sure to wipe out the pan with a paper towel and add another two tablespoons of butter each time.
