Calling all pickle fanatics: this keto egg salad is for you. Turn it into a sandwich or just spread it on a cucumber or a pickle slice for an easy low-carb snack. The tangy pickles and fragrant dill make this egg salad so tempting that you might just find yourself eating it with a spoon straight from the fridge (we won't judge).

Ingredients

  • 6 Pete and Gerry’s Organic Eggs, hard boiled and finely chopped
  • 1/2 cup dill pickles, finely chopped
  • 3 tablespoons mayonnaise
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • Salt and pepper to taste
  • Bread rolls and/or pickle slices for serving

Directions

Step 1

Combine eggs, pickles, mayonnaise, and dill in a medium bowl. Stir until well mixed. Season with salt and pepper to taste.

Hi Elaine! While there's no reason you couldn't trade out the dill pickles for dill relish, we wouldn't be able to guarantee that dill relish would have the same nutritional content. Most relishes have a sugar content, so if you do make the switch we recommend tasting as you go and being mindful of any changes in sweetness. We hope that helps!

Amazing!!! I didn’t have dill on hand, so I used a combination of rosemary, thyme and parsley of the same measurement for the dill. I ate it straight out of the bowl with a spoon. Will certainly make again!!!
