A light and dreamy way to enjoy your eggs—light as a cloud, in fact. These heavenly cloud eggs with fluffy whipped egg whites, runny yolks, melty Gruyère, crispy bacon bits, and fresh green onion are the key to hosting a brunch that's out of this world.

Ingredients

  • 4 Pete and Gerry’s Organic Eggs, whites and yolks separated
  • 1/2 cup grated Gruyère cheese
  • 1/3 cup chopped green onion
  • 4 slices bacon, cooked and chopped finely
  • 1/4 tsp black pepper

Directions

Step 1

Preheat oven to 450F. Add the egg whites to the bowl of a stand mixer. On high speed with the whisk attachment, beat the egg whites until stiff peaks form.

Step 2

Using a spatula, gently fold the cheese and green onion to the egg whites, taking care not to deflate the mixture.

Step 3

Line a sheet pan with a nonstick baking mat or parchment paper. Spoon the egg whites onto the prepared sheet pan in 4 equal nests or mounds.

Step 4

Create small indentations in each egg white nest, then season with pepper. Bake for about 3 minutes, or until egg white is just starting to firm up.

Step 5

Gently place an egg yolk into each egg white nest. Return to oven and bake for an additional 3-4 minutes, or until whites are starting to brown just slightly and yolks are still runny.

Step 6

Garnish with the chopped bacon and more green onion, then serve immediately.
